To join Ender's Minecraft server from your Nintendo Switch, you need to download and install Minecraft from the e-store or purchase a physical copy, sign in with your Nintendo account, and your Microsoft account. Then, you can add Ender as a friend and join the club.

Overview
Install Minecraft on your Nintendo Switch
To play Minecraft on your Nintendo Switch, you have to buy a digital copy via Nintendo's eShop or a physical copy from a retail partner. It costs about $30.
Visit the Nintendo eShop or buy a physical copy of Minecraft from a retail partner
Download and install the game
If you already own the game, open it and make sure you've got the most recent version installed
Link an existing or new Nintendo account
Once you've opened Minecraft, there'll be a button on the bottom-left of the screen asking you to sign in with your Nintendo account
Click that button, and follow the instructions on screen to link your Nintendo account or create a new one
If you haven't already done that on your Switch, you'll need access to a computer or mobile phone to complete this step
One you're finished, return to Minecraft
Sign in with an existing or new Microsoft account
Click on "Sign In With Minecraft Friends"
Scan the QR code with your phone or open the displayed URL on your computer
Enter the the displayed code
Press b to exit the pop up
On the new pop up click the green button
Join Ender's Minecraft server
Open Minecraft on your Nintendo Switch
Click on "Play"
Tap on the "Friends" tab in the center of the screen and scroll to the bottom
Click "Search friends from other platforms"
A new window will pop up, enter "joinender" and click "Add friend" to proceed
Back in the "Friends" tab, locate "Minecraft Club" all the way at the bottom. It might take up to one minute for it to appear
Once it's there, click on it to join for the first time. Make sure to do this together with your kid (there might be a surprise waiting for you)
On the pop up, check the box and click on proceed
Congratulations! You've installed Minecraft on your Nintendo Switch, linked all your accounts, and successfully joined Ender's Minecraft Club server for the first time. You're ready for the club!
